Former Halls Chophouse executive chef joins Restaurant 17

Restaurant 17 recently added Nicholas Graves as executive chef. Graves most recently served as executive chef at Halls Chophouse in downtown Greenville.

He has over 11 years of experience working in the professional food service industry. He has worked with several well-known chefs throughout the country including Bill Austin and Louis Osteen. He was part of the opening team of Husk in Nashville, Tenn., and later served as sous chef at the Commander’s Palace in New Orleans.

“This is where I continued my learning, refinement of food and the understanding that our role as chefs is to feed people,” Graves said in a release. “As much as we as the chefs want to create beautiful dishes and wonderful flavors, we must always remember that our food needs a following, and therefore needs to speak to more than the person making it.”

Restaurant 17 offers a modern cuisine with an international flair named after the number of times the hotel’s co-owner, George Hincapie, rode in the Tour de France. The restaurant is located at Hotel Domestique in Travelers Rest.
