Saltwater Kitchen, the latest restaurant from the Rick Erwin Dining Group, opens Thursday, May 23, at 11 a.m. in Haywood Mall.
The nearly 6,000-square-foot restaurant is in the former Palmetto Moon retail space fronting the parking lot on the lower level, to the right of the mall entrance nearest the Apple Store.
Craig Gaulden Davis Architecture designed the space, which is the dining group’s most expensive build-out to date, to feel less like a restaurant in a mall and more like a destination with expansive outdoor patio bar with sailing and rigging-inspired details that flows into the interior space.

The new seafood restaurant is under the leadership of executive chef Josh Thomsen, also exec of Rick Erwin’s Eastside, and general manager Chelsea Joseph.
The decidedly Southern, seafood-focused menu will highlight chef Thomsen’s strength of showcasing fresh, seasonal ingredients in an approachable way.
Hours of operation are Sunday-Thursday, 11 a.m.-10 p.m. and Friday-Saturday, 11 a.m.-11 p.m.
