Foodies in Greenville will soon have a new burger place to add to their list.
Molly and Miles Ice Cream co-owner Nicole O’Brien and former Sassafras Southern Bistro owner Brant Kennedy have teamed up to open Windy City Burgers at 12 East Coffee Street in Greenville.
O’Brien, who also owns Chicago-based Brgrbelly, wanted to bring her homemade signature style buns and custom smoked pork belly and ground chuck meat blend to the Upstate, while creating a whole new menu.
“We are going to have 10 crazy burgers, five crazy fries, craft beer and wine,” O’Brien said. “Our concept is pretty cool. We make our bread. We grind our own meat and everything is [made] from scratch, so there’s a lot that goes into these burgers. [It’s] different creations of our favorite foods put together with the burger meat. It will be kind of fun to show people something a little bit out there.”
Among the “crazy” creations will be a burger topped with a crabcake and another one topped with an eggroll and Asian slaw.
As far as the fries go, each order will be topped with onion straws and the menu may include an option with a fried egg and bacon, said O’Brien.
Another thing O’Brien wanted to bring from Chicago to Windy City Burgers is an emphasis on to-go orders and delivery, which is why she said she focused on finding a smaller space.
“I was looking for something really small,” said O’Brien. “Kind of like a little urban feel. We’re going to have 18 seats in there. We want to focus on to-go and delivery as well because that’s kind of where the world is going at this point. My concept in Chicago is similar to that [and] it got through the pandemic with a lot of to-go and carryout.”
Windy City Burgers is expected to open by early June.
