Premal and Sonal Desai love food and travel for food.
The Desais are the owners of Indigo Kitchen, an Indian eatery located in The Silos of downtown Easley, which opened two years ago. From the beginning, it was a way for them to connect with their roots and share Indian flavors and culture.
In 2024, the Desais will expand to Phase II of The Commons in Unity Park, an addition they’re excited to make.
“The Commons was our original spot that we really wanted to start our idea,” Premal Desai said. “Due to COVID, we kind of held back and ended up getting an opportunity in Easley. The Easley community really helped us grow and gave us a lot of feedback, and we’re so thankful and grateful for that opportunity in Easley that is allowing us to grow.”
For them, the move is a callback to the conception of the establishment. Premal said in India, it’s common to see vendors and small stores selling items or food containing recipes passed down through generations of family.
“We wanted to relate that with The Commons,” Desai said. “[The] Commons is a central, historical spot and we feel like the new and the old go together well there. It was the perfect location to share the street-style, small setting that we were looking at.”

The Desais also spoke of the present diversity in Greenville, making it an ideal location for the business.
The new location will have a bar and serve cocktails with Indian flavors as the focus.
“Once you open up the book of spice in India, it just goes on and on,” Desai said. “There’s so many combinations that are so amazing, and I feel like we have an opportunity here to incorporate some of the spices and create anew with these spices.”
The targeted opening date for Indigo Kitchen at The Commons is March 2024.
